Brunching out with my hubby is my favourite treat. But during these seemingly endless lockdowns, I have learnt to make my own brunches at home. Waffles have fast become a quick and easy, yet very tasty treat!
These waffles are savoury and served perfectly alone or topped with poached eggs and a side of bacon!
Zucchini Waffles
Gluten-free brunch, savoury waffles tasty all alone, or served with poached egg and a side of bacon.

Equipment
- waffle maker
Ingredients
- 500 g zucchini grated
- 3 eggs
- ½ cup almond meal
- 2 tsp dried parsley
- 2 tsp dried basil
- 1 tsp dried oregano
- ½ tsp salt
- ¾ cup grated parmesan
- ¼ cup coconut oil melted
Instructions
- Grate zucchini, then dry off in paper towel or clean tea towel.
- Combine all the ingredients well.
- Heat waffle maker
- Add a large scoop of the mixture to the hot waffle maker and cook, don't forget to flip half-way through. You should be able to make 4 waffles (depending on the size of your waffles).
Notes
These waffles can be frozen or refrigerated and then reheated in the waffle iron when ready to eat!
