I love Asian inspired food. I think it is the use of the sour and umami together. This recipe uses mirin sauce which is sweet rice wine. It is probably not technically paleo, but it does add a sweet touch to the sour of the rice wine vinegar and the umami (savory taste) of the soy or coconut aminos.
This recipe is easy to prepare and can be adapted to be used in many ways. You can serve plainly over rice (as in the aboce picture. Or you could put it in rice paper rolls with vegetable and dip into a spicy chili sauce. You could even put it on a top of a salad bowl for a tasty protein!
Chicken San Choy Bow
Chinese inspired Chicken. Dairy-free, Paleo and Gluten-Free
Servings: 4 serves
Ingredients
- 500 g chicken mince
- 3 tbsp coconut oil
- 1 onion diced
- 3 spring onions sliced
- 1 tsp ginger powder
- 2 tsp garlic crushed
- 1 carrot grated
- ½ tbsp mirin
- 1 tbsp rice wine vinegar
- ⅓ cup soy sauce (use coconut aminos for gluten-free alternative)
- rice, lettuce cups, rice paper to serve with
Instructions
- Dice onion, slice spring onions and grate carrot
- Stir fry onions and 3/4 of spring onion, for 3-4 minutes then add grated carrot
- Add ginger and garlic
- Add mince, cook meat until cooked through
- Add soy, vinegar and mirin, cook through for another 2-3 minutes
Plating
- Serve in lettuce cups, over rice, or wrapped in rice paper rolls with fresh salad vegetable sticks
